Why is it Special?

This is your chance to have me, Marc-André Dubois, Executive Chef, cook for you & your favourite people in your home, backyard or venue of choice. My 20 years of experience draw from some of the best high-end restaurants & resorts across western Canada. It's my mission to recreate this fine dining experience for you in the intimacy of your home, both in terms of quality of food & service. Allow me and my team to bring the essence of fine dining into an intimate experience you'll never forget.

How does it work?

We set up a phone call to discuss dates, budget, menus, food preferences & restrictions, etc... Afterwards, we meet at your house or chosen venue to look at the kitchen & dining room set up. I'll send you a quote with a menu to review. I'll also take care of all the shopping related to the food and service aspects of the event, including plate ware, glassware, flatware and linens. On the day of the event, I'll arrive about 3 hours prior to the start of the event. I'll start cooking while you relax & get ready for your guests. I'll be there to ensure everything works brilliantly, and leave your kitchen cleaner than when I showed up.

WHAT PEOPLE SAY

Marc-André Dubois prepared a seven-course meal for us last week and it was one of the best meals of our lives.  He handled the whole process from planning to clean-up with professionalism and panache.  He easily worked around any food preferences or allergies.  The food was amazing both in presentation and flavor profile.  

Each dish was a little work of art with beautiful and tasty garnishes.   It would be very challenging to choose a favorite but if pushed I would say the venison on smoked crostini was one of mine. 

In addition to the exquisite food, Marc-André prepared a list of suggested wine pairings that perfectly complemented our meal. 

We can’t wait to have another occasion that merits having him back in to cook for us and our friends again!

Marc-André was asked to assist in the preparation and serving of the food. The food and service at these functions are most critical because this group appreciates and enjoys good food and wine.
Marc-André gave careful thought to the requests and requirements of the various participants and very successfully satisfied them all including the menu selections, preparations and presentation and, in fact, exceeded all our expectations.
The four courses included Marc-Andre’s signature crab cakes with Tarragon aioli, followed by a tasty pasta dish and a fresh green salad. We then were served a succulent, perfectly cooked beef tenderloin.
Marc-André selected this menu in conjunction with the wines that were to be served.
In all, a very tasty luncheon that lasted late into the afternoon.
A further testimony to Marc-Andre’s prowess is that the weather co-operated as well.

Every bite was a unique and refined balance of flavors. You provided service that was personal yet discreet and professional. The entire menu was amazing but I think you have totally ruined my expectations for scallops in the future, they were perfect and that sauce was unbelievable.

Your talent for cooking and enthusiasm for dining made for an evening that will long be talked about and remembered. I hope to have an opportunity to share with you again in the future. 

I wanted to tell you what on awesome performance the Dubois  Food Co team put on last night at my home. All of my guests were incredibly impressed! Marc-André and Brian must have worked the “preparation” phase for at least 8 hours and that’s not counting all that went into it before they arrived at my house at 10:30am. Kelsey set up my dining room perfectly which actually isn’t that easy to do since it is really too small to fit the ten guests. Simple but ingenious innovation. The food was simply delightful, five courses each paired with just the right wine and each prepared with a noticeably delicate, refined touch. The service and timing was so smooth, better than any of the highest ranked restaurants I’ve been too. And my house was left better than they found it for which we are also very grateful!  Marc-André, Kelsey and Brian should be very proud. It was indeed very special and I’m already trying to figure out how I can book it again. Please extend a very special thank you on behalf of all of us.

Marc-André made my wedding dinner so amazing and special. In addition to the fantastic (I cannot emphasize this enough) food, he was so friendly and very happy to give us cooking tips. To make it even better, my mother-in-law and I have, what some would consider tricky food allergies, not Marc-André. He ran with it, and it was so nice to be able to trust that the food he was preparing would not send either of us to the hospital. We loved the dishes he created so much that myself and two guests have already tried recreating them multiple times. He will get a shining recommendation from me every single time!
